Egg noodles with spicy minced meat

Ingredients for 4 servings:

  • 1 large onion(s), red
  • 4 garlic cloves
  • 4 cm ginger, fresh
  • 400 g Chinese egg noodles
  • salt and pepper
  • 2 tbsp oil
  • 500 g minced meat, mixed
  • 4 tsp sambal oelek
  • 2 tbsp soy sauce, sweet (Ketjap Manis)
  • ½ bunch coriander leaves or ground coriander
  • Paprika powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the onion, garlic, and ginger and chop very finely. For the noodles, bring a large pot of water to a boil and add salt. Cook the noodles until al dente, then drain. Heat the oil in a wok or frying pan. Brown the onion, garlic, and ginger in the oil. Fry the minced meat until crumbly. Mix in the sambal oelek and season with ketjap manis, salt, pepper, and paprika. Wash the coriander and shake dry, pick off the leaves, and chop finely. Stir about half into the minced meat, or add a tablespoon of ground coriander to the minced meat, or simply season to taste. Add the noodles to the pan, mix everything together, and season with more coriander, if desired.
