Ingredients for 4 servings:
- 1 cup basmati
- 1 kg pumpkin flesh, diced
- 500 g minced meat, mixed
- 1 onion(s)
- 2 garlic cloves
- 2 tbsp olive oil
- 4 tbsp sour cream
- 2 tbsp soy sauce
- 1 tbsp curry powder
- 2 tsp vegetable broth, granulated
- 2 cups water
- salt and pepper
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Bring the water and vegetable stock to a boil. Add the rice and curry and simmer over low heat with the lid closed until the rice is tender. Cut the pumpkin into strips. Chop the onion and mince the garlic cloves. Heat the oil in a wok. Sauté the onion and garlic and add the minced meat. Add the pumpkin and cook over medium heat for about 15 minutes, stirring occasionally. Add the rice, sour cream, and soy sauce and stir thoroughly. Season with salt, pepper, and curry powder. Simmer for about 5 more minutes.
