Coconut sago soup

Ingredients for 4 servings:

  • 50 g sago
  • 200 ml water
  • 1 can coconut milk
  • 200 ml water, hot
  • 1 cup milk
  • 150 g sugar
  • Juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Soak the sago in 200 ml of hot water for about 10 minutes. Combine all ingredients except the mango juice in a saucepan and heat. Strain the sago, add it to the pan, and cook until the sago is translucent (if using two cans of coconut milk, reduce the amount of water added). Ladle the soup into bowls and serve. Tip: Increase or decrease the amount of sugar and coconut milk to taste. The soup can be served hot or cold. Or, fill a drinking glass half with mango juice and half with sago soup for a decorative effect.
