Indian cardamom semolina with raisins

Ingredients for 6 servings:

  • 300 ml milk
  • 120 g sugar
  • ½ tsp saffron threads
  • 4 tbsp ghee or clarified butter
  • 150 g semolina (wheat semolina)
  • ½ tsp cardamom
  • 2 tbsp raisins
  • 3 tbsp almond slivers

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Bring the milk, 200ml water, the sugar, and the saffron to a boil in a saucepan over medium heat and simmer for one minute. Remove the saffron milk from the heat and set aside. Melt the ghee in a saucepan and toast the semolina over medium heat, stirring constantly, until golden brown. Toast the cardamom seeds in a dry pan until fragrant. Mix the saffron milk, raisins, and slivered almonds into the semolina. Simmer over medium heat until the mixture thickens. The semolina can be served hot or cold. Dried plums and cashews can also be used.
