Savory ham and cheese muffins

Ingredients for 1 servings:

  • 160 g cooked ham
  • 2 onions
  • 1 bunch of chives
  • 200 g flour
  • 1 packet of baking powder
  • some baking soda
  • Salt
  • pepper
  • some paprika powder, sweet
  • ½ clove(s) garlic, finely chopped
  • 180 g Gouda, grated
  • 60 g butter
  • 2 eggs
  • 150 g yogurt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Makes 12: Preheat oven to 175°C (350°F). Line a muffin tin with paper baking cups. Cut the ham into thin strips, peel the onions, and dice them into small pieces. Wash the chives, pat them dry, and cut them into small pieces. Combine the flour, baking powder, baking soda, salt, pepper, paprika, garlic, and 140g grated cheese, then stir in the ham, onions, and chives. Melt the butter in a small saucepan. Crack the eggs into the butter and stir in the yogurt. Briefly stir the flour mixture into the egg mixture. Pour the batter into the muffins, sprinkle with the remaining cheese, and bake in the oven for about 30 minutes until golden brown. The muffins taste best when still warm. 194 kcal per serving.
