Our favorite potato salad

Ingredients for 4 servings:

  • 1 kg potatoes
  • 1 small onion(s)
  • 1 tbsp vinegar
  • ⅛ liter meat broth
  • 2 eggs, hard boiled
  • 2 tbsp Miracel Whip or salad mayonnaise
  • Cucumber juice
  • 4 small cucumbers (pickles)
  • 2 tomatoes (vine tomatoes) or approx. 12 cocktail tomatoes
  • salt and pepper
  • Maggi

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil the potatoes, peel them, and let them cool; then slice them, season generously with pepper and salt. Dice the onions, add them, and add the vinegar. Pour the meat broth over the potatoes. Mix in the Miracle Whip, diced gherkins, cucumber juice, and Maggi. Chop or dice the eggs in an egg slicer and add them. Chop the tomatoes, mix them in, and let the salad marinate. Season to taste before serving (sprinkle with fresh parsley if desired). Meat eaters can use bologna instead of (or in addition to) the tomatoes.
