Ingredients for 4 servings:
- 500 g chicken breast fillet(s)
- Pepper, white
- Salt
- 2 tbsp oil
- 250 g potato(s), waxy
- 1 tsp butter
- 200 g tomatoes
- 1 gherkin(s)
- 200 g ham, cooked
- 2 apples
- 3 tbsp mayonnaise for salad
- 1 tsp tomato ketchup
- Pepper, white
- Salt
- 2 tbsp vinegar (white wine vinegar)
- 2 tbsp chives, in rolls
Instructions
Working time approx. 1 hour; Rest time approx. 2 hours; Total time approx. 3 hours
Wash the chicken, pat dry, and season with pepper and salt. Heat the oil in a non-stick pan and sear the meat until crisp. Reduce the heat and sear the meat for another 5 minutes, turning frequently. Remove from the pan, drain on kitchen paper, and let cool. Meanwhile, wash the potatoes and cook in water with butter for 20 minutes. Wash and dice the tomatoes, dice the gherkin, and finely slice the ham. Peel, quarter, core, and dice the apples. Cut the chicken into thin strips. Loosely mix these ingredients in a bowl. For the sauce, combine the mayonnaise, ketchup, pepper, salt, and vinegar. Stir in the chives. Fold the sauce into the salad and let it marinate in the refrigerator for 2 hours. Let stand at room temperature for 30 minutes and season again to taste.
