Fried flatbread

Ingredients for 10 servings:

  • 225 g flour, chapati flour (or wholemeal flour)
  • ½ tsp salt
  • 1 tbsp Clarified butter or ghee
  • 300 ml water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place the flour in a large bowl and mix with the salt. Make a well in the center and add the ghee/butter. Slowly add the water while stirring and work everything into a soft dough. Cover the dough and let it rest for 10-15 minutes. Then knead the dough well by hand for 5-7 minutes and divide it into 10 equal portions. On a floured work surface, roll out each portion into a round flatbread. Use a sharp knife to lightly score the flatbreads in a lattice pattern. Heat a cast iron pan and place a flatbread in the pan. Fry the flatbread for about 1 minute, then turn it over and brush it with 1 teaspoon of ghee/butter. Turn the bread over again and fry over medium heat until golden brown, gently lifting it with a spatula and turning it slightly. Turn it over again, remove it from the pan and keep it warm while you cook the remaining bread.
