Ingredients for 4 servings:
- 750 g potatoes
- 750 g carrot(s)
- 1 tbsp butter
- ½ liter meat broth
- 1 bunch of parsley
- Salt
- Pepper, white
- nutmeg
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Peel and wash the potatoes, and cut into small cubes. Trim and slice the carrots. Heat the meat broth, add the carrots, and simmer for about 5 minutes. Now add the diced potatoes and simmer for another 5 to 10 minutes (depending on how tender they are). Drain most of the meat broth. Mix the butter into the vegetables and season to taste. Finally, trim and finely chop the parsley and stir it into the vegetables. This goes very well as a side dish with fried pork sausage, black pudding, or pan-fried meat.
