Old Berlin style potato salad

Ingredients for 2 servings:

  • 350 g potatoes
  • 2 eggs
  • 1 gherkin(s)
  • 3 tbsp sour cream
  • 2 tbsp mayonnaise
  • some lemon juice (alternatively vinegar)
  • 1 bunch of chives
  • some parsley
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Boil the potatoes as usual and let cool, then peel and slice. Hard-boil the eggs, peel and dice them. Slice the gherkin. Mix together the egg cubes, potato slices, and cucumber slices. Wash and chop the chives. Make a marinade from sour cream, mayonnaise, lemon juice, salt, pepper, and chives and pour it over the salad. Gently fold it in. Chill the salad for at least 2 hours, stirring occasionally. Sprinkle with parsley before serving. Serve as a side dish with bratwurst, schnitzel, meatballs, or cold roast meat.
