Chai – caffeine-free tea

Ingredients for 2 servings:

  • 2 cups water
  • 2 cm ginger, fresh (or dried)
  • 3 cardamom, whole pods
  • 1 tsp tea (honeybush tea)
  • Rock candy
  • Milk

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Chop the ginger and crush the cardamom in a mortar and pestle. Bring the water to a boil with the spices and honeybush, then let it steep for another 10 minutes on the turned-off stovetop. Sweeten with rock sugar, if desired (real chai is almost sticky-sweet, but tastes great unsweetened too!). Pour into cups and serve with a splash of milk. Tip: Honeybush has no caffeine, unlike black tea, and it gives the chai a mild, sweet flavor, making it easier to avoid adding sugar. Traditionally, black tea can also be used. Choose a mild variety! You can also experiment with other spices like cinnamon, cloves, pepper, etc., if desired.
