Thai Apple Shot

Ingredients for 4 servings:

  • 3 apples, Boskop or other sour
  • 350 ml apple juice
  • 5 sprig(s) basil, Thai
  • 2 sprigs of coriander
  • 1 tsp, leveled wasabi paste
  • 1 lime(s), organic, juice and zest
  • 1 pinch(s) of sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 10 minutes

Peel, core, and roughly dice the apples. Sauté in the apple juice until soft, then puree. Let the apple mixture cool. Pluck the herbs from the stems and finely puree them into the apple mixture. Finely grate the lime zest and then squeeze out the juice. Season the shot with wasabi, sugar, lime zest, and lime juice. Chill thoroughly in the refrigerator. Pour into glasses and serve with straws.
