Cinnamon stars of a special class

Ingredients for 1 servings:

  • 200 g butter, soft
  • 150 g sugar
  • 20 g vanilla sugar
  • 2 egg yolks
  • 250 g flour
  • 70 g almond(s), ground
  • 2 tsp cinnamon
  • 1 pinch of salt
  • 2 egg whites
  • 50 g sugar
  • Flour for the worktop

Place the butter, 150g sugar, and vanilla sugar in a bowl and beat until light and fluffy. Stir in the egg yolks, salt, flour, ground almonds, and cinnamon one after the other. Let the dough rest overnight in the refrigerator (or even on a cold balcony). Roll out the dough thickly on a floured work surface and cut out stars. Beat the egg whites with about 50g sugar until stiff and coat the stars with them (Tip: It’s easier if you brush the egg whites onto the dough before cutting them out). Place on a baking sheet lined with baking paper. Bake in a preheated oven at 175°C for about 12-15 minutes (depending on the thickness of the rolled-out dough) – the egg whites should be crispy and slightly browned. Let the cinnamon stars cool completely and then layer them in a baking tin.
