Asparagus with Black Forest ham

Ingredients for 2 servings:

  • 1 kg asparagus
  • 150 g Black Forest ham
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp butter
  • ¼ liter asparagus cooking water
  • 1 lemon(s), the juice
  • nutmeg
  • Sauce thickener, light, for the sauce
  • 1 bunch of chives

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the asparagus with 1 teaspoon of sugar, 1 tablespoon of butter, 1 teaspoon of salt, and the juice of 1 lemon for about 20 minutes. If possible, use an asparagus pot 1/3 full of water so the asparagus cooks more in the steam. Then add 1/4 liter of the asparagus water to a pot and bring to a boil with the light sauce thickener. Stir in 1 tablespoon of butter and season with nutmeg. Finely chop the chives and add them to the sauce. Arrange the asparagus on a platter, roll up the Black Forest ham slices, place them next to the asparagus, and drizzle the sauce over the asparagus. Serve with new boiled potatoes and lettuce.
