Sabine's zucchini toast

Ingredients for 2 servings:

  • 1 half zucchini
  • 6 tbsp breadcrumbs
  • 2 eggs
  • 1 package of feta cheese
  • 6 slices of toast
  • salt and pepper
  • Butter or margarine

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the zucchini and cut into approximately 0.5 cm thick slices (with the skin on). Beat the eggs and season generously with salt and pepper. Dip the zucchini slices in the beaten eggs and then coat them in the breadcrumbs. Fry in a pan until golden brown on both sides. Place on a kitchen towel to drain. Brush the toast with a little butter or margarine and place the fried zucchini on top. Slice the feta cheese and place it on the zucchini toast. Place on a baking sheet lined with baking paper. Place in a preheated oven at 200°C (fan oven) for about 5-10 minutes, until the feta cheese is lightly browned. Serve immediately.
