Ingredients for 3 servings:

  • 250 g onion(s)
  • 3 garlic cloves
  • 30 g margarine
  • 1 large can of tomatoes
  • ½ liter vegetable broth
  • 1 tbsp paprika powder, sweet
  • 1 bay leaf
  • 250 g pasta, ideally spirali
  • 1 cup sour cream
  • 1 bunch of parsley
  • salt and pepper

Peel the onions and garlic, dice the onions, and crush the garlic with a garlic press. Sauté the onions and garlic in hot fat until translucent, then add the broth and tomatoes and bring to a boil. Season with paprika, salt, pepper, and the bay leaf and simmer for a few minutes, then season to taste. Cook the pasta until al dente, drain, and add to the sauce, mixing well. For the dressing: Place the sour cream in a bowl. Separate the parsley leaves from the stems, wash, and chop. Dry slightly with a paper towel, then fold into the sour cream. Season to taste. Transfer the pasta to plates with the sauce and spoon a little more of the sour cream over the pasta.
