Allgäu cheese tarts

Ingredients for 4 servings:

  • 100 g flour (whole wheat flour)
  • 50 g butter, in pieces
  • 1 pinch of salt
  • 3 eggs
  • 120 g cheese (Allgäu mountain cheese)
  • 50 g blue cheese
  • 150 ml milk
  • 150 ml cream
  • Paprika powder
  • Cayenne pepper
  • Fat for the mold
  • Flour for the work surface

Instructions

Working time approx. 35 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 35 minutes

Place flour, butter, salt, and an egg on a work surface, chop with a knife, and quickly knead into a smooth dough with your hands. Wrap in foil and let rest in the refrigerator for about 30 minutes. Preheat oven to 200°C. Grease 4-6 tartlet molds (8-10 cm diameter). Roll out the dough thinly on a lightly floured surface. Cut out circles (approx. 12-14 cm diameter), place in the molds, and chill briefly. Finely grate the mountain cheese, finely chop the blue cheese, and mix the two together. Whisk the milk, cream, and 2 eggs until frothy, season with paprika and cayenne pepper. Divide the cheese among the molds, pour over the egg mixture, and bake in the oven for about 15-20 minutes until golden brown. Delicious hot or cold.
