Melted farmers' cheese dumplings

Ingredients for 4 servings:

  • 300 g farmer’s bread, dry
  • 180 ml milk
  • 40 g butter
  • 1 onion(s), finely chopped
  • 200 g mountain cheese, grated
  • 2 eggs
  • 1 bunch chives, finely chopped
  • salt and pepper
  • nutmeg

Cut the bread into cubes. Fry the onion in butter until soft, deglaze with the milk, and pour the mixture over the bread. Season with salt, pepper, and nutmeg. Add the eggs and let stand for about 1 hour. Then add the chopped chives and grated cheese and season again if necessary. The dough should be quite firm. Form the mixture into dumplings, place them in salted, boiling water, and let them simmer until tender (takes about 20 minutes). Serve with a delicious mushroom ragout.
