very refreshing

Place the apple, previously peeled whole and cored with a corer, in a saucepan along with the sugar, water, and liqueur. Simmer over low heat until the apple is tender but still retains its shape, and the liquid has reduced to a light syrup. During cooking, gently turn the apple occasionally to ensure it turns green all over. Then transfer it to a serving platter and, once cooled, fill the hole with some cream, the pistachios, and, if desired, the cherry.
