Ingredients for 1 servings:

  • 250 g powdered sugar
  • 250 g almond(s), ground, peeled
  • 10 g almond(s), bitter, ground, peeled
  • 1 egg(s), of which the egg white
  • 1 tsp rose water
  • 1 tsp rum
  • Cocoa powder

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Sift the powdered sugar. Mix the almonds with the powdered sugar. Lightly whisk the egg whites. Add the rose water, rum, and just enough egg whites to the almond-sugar mixture to make the mixture pliable but moist. Form the marzipan mixture into cherry-sized balls. Roll the balls in the cocoa powder. Tip: To peel the almonds, pour boiling water over them and let them stand for a moment. The skins will then peel off easily. To dry, place the peeled almonds on kitchen paper. Do not grind until they are completely dry. Rose water is available at any pharmacy.
