Ingredients for 4 servings:

  • 4 veal escalopes
  • 4 eggs
  • 4 anchovy fillets
  • 2 slices of toast
  • 1 tbsp butter or margarine
  • some smoked salmon
  • salt and pepper
  • Flour
  • 1 lemon(s), cut into slices or wedges

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Season the schnitzel with salt and pepper and coat in flour. Heat the fat in a shallow pan and fry the schnitzel on both sides. Meanwhile, toast the toast. Arrange the schnitzel on the toast and fry four fried eggs in the same fat, then top the schnitzel with them. Spread the toast with a little butter or margarine, top with a lettuce leaf, and scatter the anchovy fillets and smoked salmon on top. Garnish with lemon wedges. Serve the veal schnitzel with these bread rolls. We serve it with fried potatoes and salad.
