Ingredients for 4 servings:
- 4 roulade(s), from pork, approx. 150 g each
- 2 small onions
- 2 gherkins
- 50 g bacon or ham
- 2 tsp mustard, Düsseldorfer
- Flour
- 2 eggs
- Breadcrumbs
- salt and pepper
- butter
- oil
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes
Finely chop the onions and gherkins and mix with the mustard. If desired, fry the finely diced bacon in a pan for a while or add it as is. Season with salt and pepper. Place a tablespoon of this mixture in the center of each roulade. Gently fold in the long sides of the roulade to prevent the filling from leaking out. Then carefully fold the roulade shut like a cordon bleu. Put flour in a deep plate, breadcrumbs in a second, and beat the eggs in a third. Season with salt and pepper. First coat the schnitzels in flour, then dip them in the egg, and finally coat them in breadcrumbs. Fry the schnitzels in oil with a knob of butter until golden brown. Serve with fried potatoes or chips and a mixed salad.
