Ingredients for 4 servings:
- 2 ½ kg potatoes, mainly waxy
- 4 large onions
- 1 piece(s) bacon, fat, large piece
- salt and pepper
- possibly sauce thickener, dark
Instructions

Peel the 2.5 kg of potatoes and cut them into fairly small pieces. Dice the bacon and fry them in a large pot. Remove the cracklings. Add the peeled and diced onions. Fry the onions until they are nicely blackened. But don’t let them burn! Add the diced potatoes and fry briefly. Then fill the pot with water until the potatoes are covered. Add salt. Now let the whole thing simmer until it becomes a nice, creamy sauce! If there’s still a lot of liquid left at the end, you can thicken the sauce a little with a sauce thickener. Taste again and season with salt and pepper if desired. Creamed herring or fried herring go excellently with this sauce.
