Gratinated asparagus

Ingredients for 2 servings:

  • 500 g asparagus, green
  • Water (salt water)
  • 1 tbsp butter
  • 1 tbsp flour
  • 250 ml milk
  • 100 g Parmesan, freshly grated
  • Nutmeg, freshly grated
  • pepper, black

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Oven-baked asparagus

Wash the asparagus in cold water and trim off any woody ends. Cook the asparagus in salted water for about 2 minutes, then remove with a slotted spoon and place in an ovenproof dish. For the sauce, melt the butter in a saucepan over low heat, add the flour, and mix well. Continue stirring until golden yellow. Whisk in the milk and simmer for about 10 minutes to thicken slightly, stirring occasionally. Preheat the oven to 220 degrees Celsius (200 degrees Celsius fan/gas mark 3). Stir half of the cheese into the sauce and season with pepper and nutmeg. Pour over the asparagus and sprinkle with the remaining cheese. Leave the mixture in the oven for about 20 minutes, until golden brown. Serve with baguette and a cool white wine.
