Ingredients for 4 servings:

  • 75 g apples, dried
  • 75 g plum(s), dried
  • 1 dry bread roll
  • 1 medium onion
  • 750 g minced meat, mixed
  • 1 egg(s)
  • salt and pepper
  • 500 g leek, also called leeks
  • 2 apples
  • 2 tbsp butter or margarine
  • 150 ml whipped cream
  • 250 ml vegetable broth (instant)
  • 50 g almonds

Instructions

Working time approx. 1 hour 30 minutes; Rest time approx. 1 hour; Total time approx. 2 hours 30 minutes

Chop the dried fruit into small pieces and soak for about 1 hour. Soak the bread roll as well. Dice the onion. Knead everything with the minced meat, egg, and squeezed dried fruit, and season. Shape into a loaf for roasting. Cook in a hot oven (electric oven: 175°C/ fan oven: 160°C/ gas mark 2) for about 1 1/4 hours. Cut the leek into rings and the apple into wedges. Sauté the apple slices in the fat for about 2 minutes and then remove. Sauté the leek rings in the frying fat and season. Add the cream and stock, bring to a boil, and simmer for 10 minutes. Stir in the apple slices and season to taste. Toast the almonds. Arrange the meatloaf on a platter, arrange the vegetables around it, and sprinkle with almonds. Serve with spaetzle.
