Spinach salad with feta cheese and blueberries

Ingredients for 2 servings:

  • 100 g young leaf spinach
  • 100 g sheep’s cheese
  • 1 tbsp vinegar (white wine vinegar)
  • 1 tsp mustard
  • 3 tbsp oil
  • some salt and pepper from the mill
  • Sugar
  • 125 g blueberries

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with grilled meat

Trim, wash, and spin dry the spinach leaves. Break the feta cheese into small pieces. Whisk the white wine vinegar with mustard, oil, and 1 tablespoon of water; season with salt, pepper, and sugar. Wash and drain the blueberries. Mix the spinach, feta cheese, and blueberries and serve drizzled with the mustard vinaigrette.
