Ingredients for 1 servings:
- 300 g flour
- 150 g sugar
- 1 packet of vanilla sugar
- 1 pinch of salt
- 175 g butter
- 1 egg(s)
- 1 kg quark (20% fat)
- 200 g sugar
- 1 packet of vanilla sugar
- 4 eggs
- 100 g whipped cream
- 100 g butter, liquid
- 1 lemon(s), grated peel
- 2 packs of pudding powder (vanilla) for cooking
- 300 g plum jam
- Sugar granules
- whipped cream
- Plum jam
- Cocoa powder
Instructions
Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes
Cheesecake with plum jam and crumble
Grease a springform pan (26 cm, approx. 8 cm high). Knead the flour, sugar, vanilla sugar, salt, butter, and egg, first with a hand mixer (dough hook), then briefly with your hands to form crumbles. Press about half of the crumbles into the base of the pan. Chill for approx. 30 minutes. Mix the quark with the sugar and vanilla sugar well. Then stir in the eggs, cream, melted butter, lemon zest, and custard powder one after the other. Spread 300 g of plum jam on the base, leaving about ½ cm free around the edges. Spread the cheese mixture on top. Bake the cake in a preheated oven at 200 °C, fan oven 175 °C, gas mark 3 on the lowest rack for approx. 30 minutes. Remove from the oven, spread the remaining crumbles on top, and continue baking for approx. 30 minutes. Let stand in the switched off oven with the oven door open for approx. 10 minutes, then remove and allow to cool completely. Chill in the pan overnight. Before serving, decorate the cake with granulated sugar, cream puffs, plum jam and cocoa.
