Asparagus salad made from raw asparagus

Ingredients for 2 servings:

  • 250 g asparagus, white
  • 250 g asparagus, green
  • ½ bunch radishes
  • ½ bunch of spring onions
  • lemon juice
  • olive oil
  • Salt and pepper, black, freshly ground
  • ½ tsp mustard, medium hot
  • ½ handful of chervil
  • ½ handful of chives

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

vegetarian, vegan, with radishes and spring herbs

Peel the white asparagus and trim the ends diagonally. If desired, peel the lower third of the green asparagus and also trim diagonally. Slice the stalks diagonally using a slicer; I use a level 4. Slice the radishes and spring onions slightly finer. Mix a vinaigrette with lemon juice, olive oil, mustard, salt, and pepper. Finely chop the herbs and mix in. This is an ideal side dish for two people to serve with grilled veal loin or chop. As an appetizer, this quantity serves 3-4 people. This salad is our spring favorite this year.
