Corsican tomato salad

Ingredients for 4 servings:

  • 6 large tomatoes
  • 2 onions
  • 4 cloves garlic
  • 1 bunch parsley, chopped
  • 3 tbsp capers
  • 10 olives, black
  • 4 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the tomatoes and remove the stem ends. Slice the tomatoes and arrange them on a platter. Finely dice the onions and thinly slice the garlic. Sprinkle both ingredients over the tomatoes along with the parsley, capers, olives, and oil. Season with salt and pepper.
