Ingredients for 2 servings:
- 450 g potatoes
- 50 ml buttermilk
- 50 g bacon cubes
- 2 m.-large zucchini
- 50 g muesli (fruit muesli)
- some fine oat flakes for sprinkling
- some vegetable broth
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes
Very unusual, but worth it: mashed potatoes with muesli, just try!
Boil the potatoes until tender and mash them with the buttermilk and a little vegetable stock, if desired. Add the bacon. Halve the zucchini and scoop out the insides with a pointed teaspoon. Add the insides to the mashed potatoes. Place about 2 tablespoons of the mashed potato and zucchini mixture into a casserole dish, large enough to hold the zucchini halves. Mix the mixture with a little vegetable stock. Place the scooped-out zucchini halves on top. Place the casserole dish with the zucchini in the oven and preheat the oven to about 200°C (top and bottom heat). Season the mashed potatoes with salt and pepper and add the muesli. Once the oven is hot, remove the zucchini and fill with the mashed potatoes. Sprinkle with oatmeal. Bake on the top rack for about 10 minutes. It may sound unusual, but I was really surprised by the mix of mashed potatoes, bacon and fruit muesli.
