Shrimp cocktail with avocado

Ingredients for 4 servings:

  • 150 g cherry tomatoes
  • 2 spring onions
  • 250 g avocado(s)
  • 2 tbsp lemon juice
  • 300 g shrimp (in brine)
  • 1 shallot(s)
  • 75 g salad cream
  • 100 g natural yogurt
  • 40 g tomato ketchup
  • 2 tbsp brandy
  • salt and pepper
  • Sugar

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash and halve the tomatoes. Trim the spring onions and slice them into rings. Peel the avocado, cut them into chunks, and drizzle with lemon juice. Drain the shrimp. Peel and finely dice the shallot. Mix the salad cream with yogurt, ketchup, and brandy. Add the diced shallots. Season the dressing with salt, pepper, and sugar. Mix the tomatoes, spring onions, avocado, and shrimp and arrange in glasses or on plates. Pour the dressing over the salad and serve.
