Ingredients for 1 servings:

  • 80 g wholemeal spelt flour
  • 30 g wheat flour, type 405
  • some flour, for processing
  • 20 g sugar
  • 6 g sweetener (sweetener with stevia)
  • 90 g butter (yogurt butter)
  • 1 egg yolk
  • 2 pinches of citric acid
  • 2 pinches orange peel flavoring
  • 1 pinch of vanilla
  • 2 figs, dried
  • 2 tbsp jam, if possible red or punch jelly
  • 2 tbsp muesli, crushed with a mortar and pestle.

Instructions

Working time approx. 40 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 40 minutes

Make a dough from the ingredients for the dough and chill in the refrigerator for about 30 minutes. Meanwhile, mix together the ingredients for the filling: Finely chop the figs, warm the jam briefly, add the muesli, and mix until it forms a thick paste. Now take the dough out of the refrigerator and roll it out between baking paper. It should be about 0.5 cm thick. Then spread the paste on top, leave a little space around the edges, and roll it up. In my case, the roll was about the size of a 2-euro coin. Chill thoroughly again in baking paper, covered with baking paper and aluminum foil, or briefly in the freezer if necessary. Then cut thin slices from the roll and place them on the baking paper, flattening them again if necessary. Bake for about 15 minutes, depending on the size and thickness. The result is rather unusual, fruity Christmas cookies that are also worth a bite to eat.
