Ingredients for 35 servings:
- 100 g flour
- 30 g vanilla protein powder
- 75 g almonds, ground, blanched
- 50 g erythritol (sugar substitute)
- 100 g butter, light
- 1 egg yolk
- n. B. Vanilla flavour powder
- 100 g jam, sugar-free
Instructions

Knead all ingredients except the jam into a dough and refrigerate for 1 hour. Form the dough into small balls, flatten them slightly, and make a small hollow in the center (for example, using the rounded end of a wooden spoon). Add a little jam (tip: don’t add too much, or it will overflow during baking) and bake the angel eyes at 180 degrees Celsius (top/bottom heat) for about 15 minutes.
