Ingredients for 1 servings:

  • 14 g peppercorns, black
  • 7 g allspice berries
  • 10 g juniper berries
  • 4 g cloves
  • 5 g bay leaves
  • 9 g cinnamon stick(s)
  • 1 g aniseed

a quite useful spice mix for red cabbage (blue cabbage)

Place the mixture of coarse and fine spices into a food processor or blender (a hand blender would also work) and grind everything thoroughly. The ground, homogeneous mixture is then transferred to a spice shaker. Please weigh the aniseed precisely; it’s better to use too little than too much. Directions: Add one level to heaped teaspoon of this spice mix per kg of red cabbage during cooking. Red cabbage from a jar (usually 600 g) can also be spiced up with a splash of red wine and this spice mix.
