Pork liver with green beans

Ingredients for 1 servings:

  • 100 g pork liver
  • 35 g diced raw ham
  • 125 g green beans
  • 15 g cashew nuts
  • 1 small onion(s)
  • 1 piece(s) ginger
  • 1 garlic clove(s)
  • 2 tbsp soy sauce, light
  • ½ lime(s)
  • 1 handful of coriander
  • some pepper
  • some rapeseed oil
  • e.g. fish sauce

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Asian, simple, low carb

First, trim the ends of the green beans. Then, wash the beans and cook them in boiling water for about 10 minutes. Meanwhile, lightly roast the cashews in a pan without oil and then set aside. Now chop the onion, ginger, and garlic into small pieces and add them to a pan with a little rapeseed oil. Sauté the onion and ginger mixture for a while. Meanwhile, cut the liver into bite-sized pieces. Add the liver and the ham cubes to the onions, season with a little pepper, and fry until the liver is cooked through. Then add the soy sauce, lime juice, and the now-cooked beans and simmer for another 5 minutes. Add the cashews and a few coriander leaves. At the end, you can season everything with a little fish sauce, but be careful! Fish sauce is very salty, and the ham cubes can make everything very salty. If you don’t want to eat low-carb, you can serve it with rice. Calories: approx. 440kcal (carbs 20g, fat 20g, proteins 40g).
