Chard with Gorgonzola sauce & pork medallions

Ingredients for 4 servings:

  • 1 kg chard
  • 600 g pork fillet(s)
  • 200 g Gorgonzola (or other blue cheese)
  • 1 cup of sweet cream
  • 1 glass of dry white wine
  • 1 clove(s) garlic
  • 2 onions
  • Salt
  • pepper
  • oil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash the chard and cut into strips. Peel and finely chop the onions and garlic. Heat a little oil in a pan and sauté the onions. Then add the chard and garlic and let it sweat for 5 minutes. Deglaze with white wine. Dice the Gorgonzola and add it to the vegetables along with the cream, then reduce the heat. Season with salt and pepper. Cut the pork fillet into medallions, sear them in a pan with a little oil, and season to taste. Serve with any potato side dish.
