Energy muesli bars

Ingredients for 1 servings:

  • 40 g apricot(s), dried
  • 40 g date(s), dried, without stones
  • 50 g walnuts
  • 70 g cashew nuts
  • 250 g almonds
  • 70 g desiccated coconut
  • 50 g cranberries, dried
  • 40 g sunflower seeds
  • 40 g pumpkin seeds
  • 40 g sesame or linseed
  • 3 eggs
  • 15 ml apple juice or vitamin juice
  • 60 g honey
  • 1 pinch of salt

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Makes approx. 20 bars

Preheat the oven to 160°C. Line a 40 x 25 x 6 cm baking dish with baking paper. Finely chop the apricots, dates, walnuts, cashews, and almonds in a blender. Combine all ingredients in a bowl. Add the desiccated coconut, cranberries, sunflower seeds, pumpkin seeds, and sesame seeds and mix well. Mix the eggs with the apple juice and honey and stir into the muesli mixture. Smooth the mixture into the baking dish with wet hands and bake for about 25-30 minutes. Cut the baked mixture into rectangular bars while it is still warm. Let it cool completely and store it in a cookie tin.
