Healthy Chocolate Protein Pancakes

Ingredients for 2 servings:

  • 2 eggs
  • 1 banana(s), ripe, mashed
  • 15 g protein powder
  • 15 g baking cocoa
  • 1 pinch of baking powder
  • 1 pinch of salt
  • Fruits, optional

Instructions

Working time approx. 5 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Mix all ingredients well and let stand for 5-10 minutes. If you like it sweeter, you can add a little sugar/sweetener. The protein powder can be omitted or replaced with flour. Heat a pan to medium heat and use a spoon to scatter small dollops of batter in the pan. If the pan is well-coated, you can also skip the oil/butter for frying. It is important that the pan does not get too hot, otherwise the pancakes will quickly burn and become too hard. When the pancakes are firm enough after about 5 minutes, carefully turn them over and cook for a while longer. I like them when they are still a little runny/soft on the inside, but that’s a matter of taste. It is also particularly delicious to bake blueberries, bananas, or apple pieces into the batter. Enjoy the pancakes with fruit, compote, honey, or on their own, as desired. Since they are healthy and low in calories, you can eat the specified amount of pancakes without a guilty conscience.
