Mushrooms with feta cheese

Ingredients for 4 servings:

  • 1 kg mushrooms, small
  • 3 tbsp oil
  • 2 onions
  • 2 garlic cloves
  • 100 g black olives
  • Salt
  • pepper
  • 1 bunch of parsley
  • 200 g feta cheese

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Clean and wash the mushrooms if necessary. Heat the oil in a large pan and fry the mushrooms for 10-15 minutes, turning occasionally. In the meantime, finely dice the onions and garlic. After about 8 minutes, add the onions, garlic, and olives to the mushrooms and season well. Let everything fry for another 5 minutes. Wash and chop the parsley and crumble the feta. Arrange the mushrooms in a cocotte and sprinkle the parsley and feta over the mushrooms. Serve with baguette and red wine.
