Ingredients for 4 servings:
- 4 large carrots
- 1 apple
- 1 orange(s)
- 8 dates
- some walnuts
- 7 tbsp olive oil
- 1 tbsp lemon juice
- 3 tbsp balsamic vinegar, lighter
- 3 tsp honey, liquid
- 1 tsp mustard, medium hot
- 1 garlic clove(s)
- salt and pepper
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Peel and grate the carrots and apple (it’s quicker with a food processor). Peel and finely chop the orange. Chop the dates. Place everything in a bowl. For the dressing, press the garlic through a press and mix all ingredients well. Pour the dressing over the salad and mix well. Let it sit for at least 1 hour. To serve, finely chop the walnuts and sprinkle over the salad.
