Ingredients for 1 servings:

  • 1 small white cabbage (or several)
  • 50 g salt
  • n. B. Caraway
  • Dill, for pickling
  • n. B. water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

White cabbage pickled differently, like sauerkraut

Cut two incisions along the stalk of a small to medium-sized white cabbage head, preferably crosswise. Add 50g of salt to each stalk and simmer in water with caraway seeds and dill for 5 minutes. Depending on the size and quantity, layer the head(s) in a stone pot, add the cooking liquid, and let it steep. Once it has cooled, weigh it down with a plate and a stone and let it stand. The “Komst” will be ready after a few weeks.
