Wipe the mushrooms with a slightly damp cloth. If they are dry, trim off the stems. Quarter larger mushrooms, halve smaller ones, or leave them whole. It is important that they are not too small and are roughly the same size. As a guideline: about the size of two tangerine wedges combined. Heat a large pan until piping hot and add the cleaned mushrooms without any fat. Don’t turn them too often, or they won’t brown. When they are already browned in places, add the onion and garlic and turn the heat down a bit. Now add butter, salt, sugar, and pepper as needed. The mushrooms will now absorb water due to the spices, and you need to continue frying until it has disappeared.
