Cauliflower, spinach and feta muffins

Ingredients for 1 servings:

  • 50 g cauliflower
  • 25 g spinach, frozen
  • 50 g feta cheese
  • 50 g cream cheese
  • 12 slices of bacon
  • 2 eggs
  • 100 g cheese, grated
  • some chives or other herbs as desired, finely chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

For 6 savory low-carb muffins

Chop the cauliflower and spinach in a food processor. Crumble the feta. Mix everything except the bacon and grated cheese together until smooth. Grease a 6-cup muffin tin. Halve the bacon strips and line each muffin tin with four bacon strips. Pour in the mixture and top with the cheese. Bake at 180°C for 20 minutes.
