Tomato and ham omelette

Ingredients for 2 servings:

  • 5 eggs
  • 2 tomatoes
  • 3 slices of ham
  • Butter for frying
  • Spice(s) to taste, e.g. paprika and pepper
  • Chive rolls

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cut the ham and tomatoes into small pieces. Briefly fry the ham in a little butter, then add the tomatoes. Fry on medium heat until the tomatoes are no longer so runny. In the meantime, crack the eggs into a bowl and whisk them together, then season to taste. I like to use paprika and pepper. Pour the egg evenly into the pan. You could also make scrambled eggs at this point. If you want an omelet, just put the lid on the pan. I like to sprinkle a little chives on top first. Cook on low heat until the egg is no longer runny on top. Once the egg is cooked through, cut the omelet into quarters to make it easier to lift out of the pan. Serve with bread or salad.
