Peppers with onions

Ingredients for 2 servings:

  • 200 g vegetable onions
  • 600 g bell pepper(s), raw weight
  • 2 tbsp oil or butter
  • 1 cup water
  • 2 tsp mixed herbs, chopped
  • some sea salt
  • some white pepper
  • 200 g cheese (soft), spicy, as desired
  • 100 g smoked tofu or nut tofu, as desired

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

also delicious with smoked or nut tofu

Peel the onion, halve, quarter, and cut into thin strips. Chop the smoked tofu into small pieces. Wash the bell pepper, deseed it, and remove the membranes, then cut it first into strips, then into even cubes. Heat the oil in a pan. Brown the onion over medium heat until well browned, stirring occasionally. If you’re using smoked tofu, fry it with the onions for a while as well. Add the diced bell pepper and deglaze with water. Cook the vegetables until the peppers are tender enough to bite. Add the spices and herbs, stir briefly, season to taste, remove from the heat after one minute, and serve. If you’re not vegan, you can also add thinly sliced, spicy cheese and let it melt. This vegetable tastes great with patties and as a pancake filling.
