Steamed parsley potatoes à la Didi

Ingredients for 2 servings:

  • 500 g potatoes
  • 1 tsp salt
  • 1 sprig of rosemary
  • 2 sprigs of parsley

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel the potatoes, halve them, and place them in water to prevent them from browning. Fill the steamer with 2.5-3 cm of water and add a sprig of rosemary. Bring the water to a boil. Place the potatoes in the steamer basket, sprinkle with salt, and hang the steamer basket in the pot. Cover and steam for 20 to 30 minutes. Meanwhile, finely chop the parsley. Sprinkle the cooked potatoes with the parsley, arrange on the plate, and serve.
