Tomato and nut pesto

Ingredients for 1 servings:

  • 8 tomatoes, dried in oil
  • 1 handful of hazelnuts, peeled and roasted
  • 2 cloves garlic
  • 100 ml olive oil
  • Basil to taste
  • some parsley, fresh
  • possibly pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

from dried tomatoes

Finely dice the tomatoes and garlic and puree in a blender. Crush the hazelnuts in a mortar and pestle and add to the tomato paste. Slowly add the olive oil. Blend everything well until a creamy paste forms. Finely chop the basil leaves and parsley and mix in. Season with pepper, if desired, and let stand for at least 2 hours. This pesto tastes great with spaghetti. Tip: If you like, you can also add some toasted pine nuts.
