Pork roll roast

Ingredients for 4 servings:

  • 1 kg roast pork (rolled roast)
  • 3 tbsp olive oil
  • 750 g leek
  • 2 cloves garlic
  • 3 tbsp tomato paste
  • 6 tbsp water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the rolled pork roast, dry it, and rub it with salt and pepper. Heat the olive oil, sear the meat on all sides, and then remove it from the pan. Wash the leek thoroughly and let it simmer in boiling water for about 10 minutes. Brown the leek and peeled garlic cloves in the frying fat. Add tomato paste and water. Place the meat on top and braise in a covered pan, turning occasionally. Slice the cooked roast, arrange it on a warmed platter, and arrange the leek spears around the meat. Season the drippings with salt and pour over the vegetables. Serve with boiled potatoes.
