Banana Baby Cookies with Applesauce

Ingredients for 1 servings:

  • 80 g butter
  • 220 g wholemeal spelt flour
  • 150 g banana(s), fully ripe
  • 3 tbsp apple sauce or apple puree with pear, e.g. from Alnatura

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

without sugar, makes about 40 – 50 cookies, for two baking trays

Melt the butter in a small saucepan over low heat. Puree the bananas with a hand mixer. In a bowl, mix the warm butter and pureed bananas with the spelt flour using a hand mixer. Wrap the dough in plastic wrap and let it rest in the refrigerator for about 10 minutes. Roll out the dough thinly with a rolling pin on a floured surface and cut out shapes. Place the cookies on a baking sheet lined with baking paper. Spread the cookies with applesauce or apple puree with pear. Bake in an oven preheated to 160°C (fan assisted oven) on the middle rack for about 10 minutes. Makes about 2 baking sheets and, depending on the size of the baking tray, 40-50 cookies.
