Ingredients for 4 servings:
- 500 g spinach, frozen
- 300 g cream cheese, grainy
- 2 eggs
- 150 g cheese, grated
- 1 tsp salt
- ½ tsp pepper
- ½ tsp nutmeg
- ½ tsp garlic granules
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
Low carb, high protein
Thaw the spinach and drain well. Crack the eggs into a bowl. Combine the spinach, eggs, and seasonings in the bowl. Fold in the cream cheese. Pour the mixture into an ovenproof dish and sprinkle with grated cheese. Bake in a preheated oven at 180°C (top/bottom heat) for about 30 minutes, until the cheese is golden brown. Serve with potato wedges. Garnish with salt and freshly ground pepper and serve. Optionally, add a dollop of crème fraîche. Tip: The spinach can be substituted or supplemented with other green leafy vegetables. Approx. 247 kcal per serving.
